It's already spring in Pablo Garrigós Ibáñez! Throughout the year there are special days that we always mark in red. Of course, one of those days is when the spring.

We can only surrender to the natural beauty of the immense fields of almond trees that surround us and that have brought out all their flowers announcing that, soon, their fruits will begin to ripen and that it is time to pamper and admire them.

In just a few months we will be jumping right into a new production season of nougatThe almonds that are now growing on the trees are used precisely for this purpose. It is nature's way of closing the circle of life.

Observing the numerous almond blossom trees that we find at every step near our production center in Jijona, we understand why our town is considered the "sweetest place in the world".

Despite the fact that the tradition of making handmade nougat dates back more than 5 centuries, the routine is the same every year. It repeats the magic and spring is only the beginning of that alchemy that makes it possible for us to enjoy one of the most delicious and healthy products of the Mediterranean diet: nougat.
