Spring is one of our favorite seasons, among other things, because it is the time of the birth of the almond.<\/p>\n\n\n\n

In this image we have recently captured you can see the fruit of the almond tree in one of its initial stages, wrapped in that characteristic green bark that protects it.

Before the kernel becomes the main ingredient of nougat<\/a><\/strong>The tree from which it is born goes through different stages. <\/p>\n\n\n\n

Winter is the beginning of everything<\/strong>
Almond trees remain dormant during the coldest months of the year. It is in winter when they lose their leaves and enter this kind of \"resting\" period. During this phase, the tree absorbs the nutrients it needs through water, which is why rainy winters are so important. <\/p>\n\n\n\n

February-March. Flowering arrives<\/strong>

Once the almond tree finishes its dormant period, at the beginning of the year (especially in February), sprouts begin to appear on the branches.us spectacular flowers<\/strong> white and pink.<\/p>\n\n\n\n

Fertilization also begins during this period. In varieties such as the marcona almond<\/strong> is carried out with the pollination of bees<\/strong>.<\/a><\/p>\n\n\n\n

Popular wisdom says that the time of flowering is the moment that marks the arrival of spring. Undoubtedly, the image of the fields with almond trees in bloom is the most visual, colorful and joyful welcome that this season can give us.<\/p>\n\n\n\n

Maturation phase<\/strong>
Once flowering and fertilization are finished, between the months of March and June is when the almond ripens. At this stage is when the shell hardens and looks more like the one we pick from the tree.<\/p>\n\n\n\n

Summer is when the almonds finish ripening. This is the time when the outer pod dries and opens, revealing the inner shell.
When are they collected?<\/strong>
When the almonds begin to fall to the ground, it is time to pick them. A task that is also carried out in the summer months.
August is the best time to harvest the marcona almond<\/strong>the variety with which we produce our nougat<\/strong>.<\/p>\n\n\n\n
